The flavour and consistency were both spot-on, and after so many disappointments trying other types of GF pasta, this has changed my life! Quick question: do you think the consistency of this dough would work with a Kitchenaid Pasta Roller attachment? Just add gluten-free flour as needed to prevent sticking.

I used a bowl and mixed with a wooden spoon first and then finished kneading with my hands which turned out to be easiest since my dough was definitely sticky before the eggs were fully incorporated. I used tapioca starch to roll it out and had no issues with that. I made chinese potstickers and plain pasta and was super pleased with the results!
Will definitely be making this again. This recipe is amazing! It tastes just like fresh wheat pasta and is so good I made it two nights in a row. I also doubled the salt and rolled it out in more batches to get it thinner. Question: where are those gorgeous pasta bowls from? This looks delicious — do you think it would work to make ravioli, or would it be too fragile? Also, do you think you could use the pasta attachment on a kitchenaid mixer to roll out?
I think that would work! Was very excited to try this. The dough was so sticky I could not get it to work. I used lots of tapioca flour to roll out but it stuck to the board. Unfortunately, I had to through the dough away after I peeled it all off the board.
Hi Robert. So sorry to hear that! I was so excited to make this, and finally got the chance to today. It is made clear in the recipe, so I added lots of tapioca starch all over my counter ad hands like it said to. When rolling it out, there would be random spots not covered no matter how much powder I would put, and it would stick.
After cutting the pasta you want to gently separate the strips of dough and cook off in salted boiling water, as you would any fresh pasta. Depending on how thickly you roll the pasta dough out, the noodles can be slightly heavier than regular pasta. That said, if you get the sheet of dough nice and thin before cutting into strips, the result is a lovely chewy noodle with a very neutral flavor.

Thank you for making my first foray into pasta making such a delicious joy!!! When I make pasta in advance I make sure to dust the noodles well with tapioca flour before curling into individual nests. I then place those nests on parchment paper in a sealed freezer bag and freeze until ready to use. When ready to cook, cook the noodles directly from the freezer without defrosting! Tapioca flour is too starchy!!! Is there anything else I can use to make is even more keto friendly. Would you boil them?
I had to substitute the sweet rice flour with arrowroot, but I used the same amount as the recipe calls for. I then entered the ingredients into MyFitnessPal, made the whole recipe 6 servings, and net carbs were only I was also able to take one of the 6 dough balls and serve it as 3 portions, so actually only around 4 net carbs. Wonderful recipe!

Can the eggs be substituted with water or possibly a healthy oil for a lower-fat version?
I would assume between the fats naturally in the almond flour and the xantham gum there should be enough emulsification, but it is strangely hard to find an almond flour pasta recipe without egg online!
Hi, Orwell. After watching Sara Kate Gillingham make pasta, I knew what would bring some joy into my day: a plate of fresh gluten-free pasta and some alone time. There was just one problem. Yet I wanted to try again. Part of me wonders if this yearning was a bit of self-sabotage, a desire to make something I thought would flop.
Another part of me thinks it was hope. Instead of putting together a complex flour blend, I simply scooped some brown-rice flour and added a little tapioca starch and xanthan gum to it.
After whisking them together, I added two eggs and stirred everything together with a wooden spoon. I rolled it out and cut it into fat ribbons. After a quick boil in salted water, I strained the noodles. Over the next two weeks, I continued making fresh gluten-free pasta. I ran it through my pasta maker.

It seemed kind of doughey. Make sure there is enough xanthan gum, and that you are blending it properly to activate the xanthan gum Step 1 in the recipe.
Also, check the consistency. If the dough is too wet and not stiff enough for that reason, you can have trouble rolling it out. I hope this is helpful. Warmly, Nicole.
